Description:
Coriander (C. sativum L.), which belongs to the Umbelliferae/Apiaceae family, is a glabrous aromatic herbaceous annual plant, which has a long history as a culinary herb as well as a source of aroma compounds. Coriander oil contains biologically active components which include antibacterial, antifungal and antioxidant activity, similarly C. sativum is useful in food preparation (as a flavoring agent and auxiliaries) and preservation as well as in preventing foodborne illness and food spoilage.
C. sativum provides two types of herbal raw materials — fruit and leaves which are steam distilled to become essential oil. Coriander will be seeded and added to dishes as an aromatic seasoning, which at the same time acts as a digestive agent that speeds up the digestion process. The yield of C. sativum EO and its chemical composition underwent changes during ontogenesis, which affected the aroma of the plant, so that the aroma of coriander fruit was completely different from that of herbs. The unripe fruit and leaves have an unpleasant odor called “rotten odor” which is caused by the trans-tridecen contained in the oil.
