DESCRIPTION:
Our kaffir lime fruit
oil is obtained from the extraction of kaffir lime peel using the steam
distillation method. The oil produced is a colorless to pale yellow liquid with
a distinctive citrus aroma that is fresh, strong, and almost similar to lime.
This oil has benefits for maintaining healthy gums, antibacterial,
antidepressant, antiseptic, killing insects, and treating digestive problems
[1,2,3].
BOTANICAL:
Kaffir lime (Citrus
hystrix) is a herbaceous plant that is mainly used for its fruit and leaves as
a cooking spice. In international trade it is known as kaffir lime, while other
names are ma kruut (Thailand), krauch soeuch (Cambodia), 'khi 'hout (Laos),
shouk-pote (Burma), kabuyau, kulubut, kolobot (Philippines), truc (Vietnam )
and lime kuwit (Banjar). The distribution of this type starts from Eastern
India, Sri Lanka, Burma, Peninsular Malaysia, the Philippines and is generally
cultivated.
Kaffir lime leaves are
used as a fragrance in cooking. This spiced orange belongs to the Papeda
subgenus, different from other types of market citrus, so its appearance is
easy to recognize. The plant is a small tree with a height of between 2-12
meters. The stems are bent or angular, rather small, and low-branched. The
header is irregular. The branches are close together. The twigs are thorny,
small and have sharp angles. The leaves are oval, blunt at the tip, and
single-stemmed. The leaves are like two strands arranged vertically due to the
extreme curve of the edges; thick and smooth surface, slightly layered with
wax. Young leaves can be a strong purple color.
The fruit is small,
usually never more than 2 cm in diameter, rounded with bumps and a rough skin
surface; thick fruit skin. Propagation is done by seed or by grafting. In the
culinary world of Southeast Asia, it is used quite often and the sour taste of
the fruit juice is usually used as a neutralizer for the fishy smell of meat or
fish to prevent nausea, such as in dumplings. The oil characteristics of the
leaves are mainly dominated by the essential oil (-)-(S)-citronellal (80%), the
rest is citronellol (10%), nerol and limonene. Kaffir lime is special because
in other oranges what dominates is the enantiomer, (+)-(R)-citronellal (also
found in lemongrass). The fruit peel has components similar to lime peel, with
the main components being limonene and alpha-pinene. The scientific name used
(Citrus hystrix) means "porcupine orange", referring to the thorns on
the stem[4,5,6,7].
HISTORICAL:
Pierre Sonnerat
(1748–1814) collected the specimen in 1771-72 and it appeared in Lamarck's
Encyclopédie Méthodique (1796). Kaffir lime appears in texts under the name
kaffir lime in 1868. In South Africa, the Arabic word kafir was adopted by
white colonialists as "kaffir", an ethnic slur for black Africans.
Veronica Vinje: Pronouncing "jeruk kaffir" is like saying the N word
before 'Lime' as a result, some authors prefer to switch from "kapur
kaput" to "kapur makrut", a less well-known name, whereas in
South Africa it is usually referred to as "Thai lime ".
