BOTANICAL AT A GLANCE:

Pepper is an important spice plant in Indonesia. Black pepper (Piper nigrum L) is a flowering climbing plant in the family Piperaceae, cultivated for its fruit (pepper), which is usually dried and used as a spice and flavoring. Pepper is also called sahang in Banjar language and black pepper in English. Pepper in other foreign languages is called poivre (French), pfeffer (German), pepe nero (Italian), pimienta negra (Spanish), filfil (Arabic), black pepper (Malaysia), and black pepper or pepper in Indonesian.

The fruit is a drupe (stone fruit) that is about 5 mm (0.20 in) in diameter (fresh and fully ripe), dark red in color, and contains a stone that encloses a single pepper seed. Pepper and the ground pepper derived from it can be described simply as pepper, or more precisely as black pepper (cooked and dried raw fruit), green pepper (dried raw fruit), or white pepper (ripe fruit seeds)[5,6,7,8].
